Three STILLROOM signature cocktails against a dark background: cut-crystal glass, ice and the house garnish

Our Cocktail Menu: The Story Behind Every Creation

At STILLROOM we do not serve drinks. We tell stories encased in glass, experiences that unfold on the palate and stay in the memory long after the last sip has left the glass. Our cocktail menu is an emotional map: every page revolves around an emotion, a memory, a moment worth pausing for. Here, in the heart of the Jerónimos neighbourhood, we have built a universe where mixology becomes narrative and every creation carries the weight of a philosophy we have named The Art of the Invisible.

A Menu That Tells Stories

There is a fundamental difference between ordering a drink and asking for an experience. At STILLROOM, that line does not exist, because we have deliberately dissolved it. The Art of the Invisible is not a slogan; it is our creative manifesto. We believe the best cocktails are not the ones that shout their complexity through ostentatious ingredients, but the ones that whisper with subtlety, that reveal their layers gradually, that invite the drinker to take an active part in discovering their flavours.

Each of the sixteen signature cocktails on our menu answers to a concept. We never start with the list of ingredients or the techniques we want to use. We start with a question: what do we want someone to feel? The answer to that question determines whether the cocktail will be citrusy and vibrant, deep and smoky, delicate and fleeting. Only then, with the feeling defined, do we look for the structure, the ingredients and the techniques that will serve as the vehicle for that experience.

This conceptual approach sets STILLROOM apart on Madrid’s cocktail scene. We are not just another bar offering elaborate drinks; we are a space where every creation carries a narrative purpose. The guest who leafs through our menu does not simply find appealing names: they find condensed stories, promises of sensory journeys that begin with the first aroma and end in the final aftertaste.

The philosophy of The Art of the Invisible also means a reverence for the essential. We reject gratuitous complexity, ingredients chosen only to impress through their rarity. We prefer precision over abundance, harmony over impact. A well-executed cocktail should feel like a fluid conversation: every note comes in at the right moment, says what it needs to say, and hands the spotlight to the next one with a naturalness that makes you forget the engineering behind it.

The Creative Process

Behind every cocktail on our menu lies a process that combines artisan intuition with technical rigour. Enzo Ruiz, our creative director, does not work alone. Developing new creations is a collective exercise in which the bar team functions as a living laboratory of ideas, a space where proposals are discussed, tested, discarded and reworked until something takes on a life of its own.

The starting point can be anything. An aroma that evokes a specific childhood memory. A colour that suggests an emotion. An unexpected ingredient someone brings back from a trip and that deserves to be explored. Sometimes the concept emerges from a technique: curiosity about what happens when fat washing is applied to a particular spirit, or how lacto-fermentation transforms a fruit’s acidity into something entirely different.

Once the direction is set, a process of iteration begins that can stretch over weeks. We develop our own cordials, slow infusions that need hours to rest, super juices that concentrate the essence of fruit and vegetables in ways that direct pressing could never achieve. Every variable is documented: proportions, extraction times, serving temperatures, presentation. Because at STILLROOM we know that reproducibility does not kill creativity; discipline elevates it.

The techniques we use are tools in the service of expression. Fat washing lets us infuse fats into spirits that would normally reject them, creating creamy textures in cocktails with nothing dairy about them. Lacto-fermentation transforms lemon’s acidity into something deeper, more complex, with notes reminiscent of lactic ferments and kombuchas. Natural carbonation, achieved through secondary fermentation, brings a subtler, more organic effervescence than soda water does. Homemade cordials, made with seasonal fruit, aromatic herbs and controlled sugar levels, add sweetness without the rawness of industrial syrups.

This commitment to technique is not showmanship. Every method is chosen because it solves a specific expressive problem. If a cocktail needs fatty body, we use fat washing. If we are after a complex, layered acidity, lacto-fermentation is our ally. STILLROOM’s creative process never puts technique above the result; the two walk hand in hand towards a common goal: making every sip say something worth listening to.

You can go deeper into how we conceive our signature cocktails and the creative process that guides every decision in our article on signature cocktails and the creative process.

Our Signature Creations: The Stories

El Jardín de los Susurros

It was born on a spring afternoon in the Retiro, when the jasmine was in full bloom and the air carried its scent all the way to the furthest paths. El Jardín de los Susurros is our love letter to those moments of botanical stillness. We use gin slowly infused with jasmine flowers, to which we add a fermented cucumber cordial that brings an almost aquatic, mineral freshness. The liquid base is rounded off with a homemade white vermouth infused with lavender, and the whole thing is served over a large ice stone that melts extremely slowly, letting the aromas unfold gradually.

Every creation on our menu tells a unique story

The lacto-fermentation of the cucumber is the silent star of the show: for five days, the cucumber rests with a minimal amount of salt, developing lactic bacteria that turn its crunchy texture into something softer and its neutral flavour into something profoundly complex, with acidic notes reminiscent of ripe melon. The result is a cocktail that feels like walking through a garden after the rain: clean, green, intimate.

Carbono 60

It is the darkest cocktail on our menu, the one that draws curious looks from along the bar. Carbono 60 was born from an obsession with smoky flavours and the idea of creating a cocktail that seemed far older than it is. We use bourbon fat-washed with smoked butter, a process that impregnates the spirit with a lingering silkiness that has nothing to do with adding real dairy. The result is a bourbon that tastes of old wood, of lit fireplaces, of stories told around the fire.

To balance that intensity, we developed a black cherry cordial with bitters and a touch of Maldon salt on top. The name refers to the C60 molecule, that perfect structure of sixty carbon atoms that scientists have found in ancient meteorites, vestiges of dead stars. It is our way of saying that some flavours are universal, that they cross time and space. It is served in a coupe glass, with an initial aroma of wood smoke that prepares the palate for the wave of dark flavours that follow.

La Quinta Esencia

Some cocktails are born from the pursuit of absolute complexity. La Quinta Esencia is our most ambitious exercise in that direction: an eight-component cocktail that has to come together in a harmony where you cannot tell where one part ends and another begins. Vodka infused for seventy-two hours with smoked black tea, combined with a lacto-fermented peach cordial, homemade passion fruit liqueur, concentrated rose water, and an egg-white foam infused with Madagascan vanilla.

The slow-infusion technique for steeping black tea in vodka needs controlled temperatures: too much heat and the tea turns astringent; too little and it fails to extract the smoky notes. Finding that middle ground took dozens of trials. The result is a cocktail that evolves on the palate: it begins with the tangy sweetness of the passion fruit, gives way to the complexity of the fermented peach, and finishes with a smoky tea and vanilla aftertaste that lingers for minutes. The quintessence, in alchemical philosophy, was the perfect element that contained everything. Our cocktail aspires to something similar: containing everything in a single sip.

Memoria de Algodón

Some cocktails are born from nostalgia. Memoria de Algodón is our letter to childhood summers, to the afternoons when time stretched on forever and anything seemed possible. The name evokes that feeling of softness, of shelter, of things that were gentler than they really were. We use white tequila as the base, but transform it with a lime-and-coriander super juice technique that multiplies its natural freshness. A roasted coconut cordial adds sweetness without heaviness, and a touch of chamomile bitters closes the aromatic circle.

The lime-and-coriander super juice is one of our most celebrated innovations. Through a vacuum-extraction process that takes several hours, we get a concentrate that holds not only the lime’s juice but also the essential oils from its peel, amplified by the addition of fresh coriander, which brings slightly soapy herbaceous notes. The result is a cocktail that tastes of summer, of freedom, of simple things that were enough.

Ocaso en Lavapiés

It is our tribute to Lavapiés, one of the most soulful neighbourhoods in Madrid. Lavapiés is a melting pot of cultures, a place where the flavours of the world meet in the streets, where Indian restaurants sit alongside traditional tapas bars and shops selling African produce. Ocaso en Lavapiés tries to capture that diversity in a cocktail: aged rum infused with cardamom and turmeric, combined with a deep-red homemade hibiscus syrup, tangy passion fruit lemonade, and a dash of orange blossom water that brings Mediterranean floral notes.

The name comes from the colour: an orange-red that recalls Madrid’s sky on summer nights, when the sun refuses to fully set and the horizon burns in impossible tones. It is a vibrant, complex cocktail that is not afraid of contrasts. The turmeric brings an earthy note that anchors the flavours, while the cardamom introduces a warm spice that appears in the aftertaste. Served in a tall glass with crushed ice, it is the perfect cocktail for a long conversation as the daylight says goodbye.

El Último Viaje

We close our selection of signature creations with the most theatrical of them all. El Último Viaje is an experience that goes beyond flavour to become spectacle. Gin infused with juniper and poppy petals, combined with a homemade lavender liqueur, grapefruit bitters, and a touch of cedar sawdust added at the moment of service. The cocktail arrives at the table inside a sealed glass jar that is opened in front of the guest, releasing a cloud of aromatic smoke that perfumes the table.

The nitro-infusion technique lets the gin absorb the volatile compounds from the cedar sawdust more efficiently than a traditional infusion, creating an aroma of forest after rain that runs through the whole experience. The name refers to that moment of transition, to the last journey we all take one day. It is a cocktail for sharing, for celebrating important moments, for marking the end of one chapter and the start of another.

Alcohol-Free Options: Inclusivity Without Compromising Quality

At STILLROOM we believe excellence should have no exceptions. That is why our menu includes three alcohol-free cocktails that use exactly the same techniques and the same exacting standards as our creations with spirits. They are not after-the-fact adaptations or simplified versions: they are drinks conceived from scratch to stand on their own merit.

Three alcohol-free signature cocktails at STILLROOM Madrid

Our alcohol-free cocktails hold to the same exacting technical standards

Mediterráneo opens the trio with a base of fermented cucumber water, similar to the lacto-fermentation technique we use in El Jardín de los Susurros. It is combined with a roasted cherry tomato cordial, fresh basil and a touch of pink salt. It is fresh, vegetal, deeply satisfying for anyone looking for something more than a soft drink in disguise.

Ámbar is our take on a dark alcohol-free cocktail. We use a sandalwood kombucha tea as the base, combined with a caramelised fig syrup and mandarin bitters. The texture is denser, more enveloping, and the woody notes bring a complexity we normally associate with aged spirits. It is the favourite of those looking for something that fills the mouth and demands attention.

Eclipse closes the trio with a brighter, more acidic proposal. Passion fruit water naturally carbonated through a second fermentation, combined with a lychee foam and a touch of rosemary. The result is a cocktail that bursts on the palate with small, persistent bubbles, tropical notes interlacing with rosemary’s resinous aroma. All three prove that the absence of alcohol does not mean the absence of sophistication: quality is non-negotiable, with or without alcohol.

The Small Plates Menu: The Perfect Complement

An exceptional cocktail deserves a fitting accompaniment. At STILLROOM we have designed a small plates menu that works as an extension of our philosophy: top-quality ingredients, our own preparation techniques, and a precise balance between flavour and presentation. These are not run-of-the-mill tapas; they are small plates designed to pair with our creations, to build combinations that amplify what the guest is already experiencing in the glass.

The oxtail croquettes, made with a red wine reduction roux and served with a wasabi mayonnaise, were conceived to complement full-bodied cocktails such as Carbono 60. The crunchy coating contrasts with the creaminess of the filling, while the mayonnaise brings a mischievous edge that cleanses the palate between sips. For our more floral cocktails, we suggest oysters with a hibiscus mignonette: the oyster’s salinity acts as a vehicle for the floral aromas, creating an experience that goes beyond the sum of its parts.

The dishes change with the seasons, naturally. We keep up a constant dialogue between bar and kitchen to work out which flavours pair best with each new addition to the cocktail menu. This integration is what lets us offer pairings that have genuinely been thought through, not simply put together by proximity. If you would like to explore more about how we harmonise flavours, we have a dedicated article on cocktail and small-plates pairing that goes deeper into these contrasts and complementary notes.

How to Enjoy Our Menu

Arriving at STILLROOM and ordering the first thing that comes to mind means missing out on half the experience. Our menu is designed to be explored, not just consumed. The first recommendation is to let yourself be guided. Our bartenders know every cocktail as if it were their own child: they know what ingredients go into it, what technique makes it possible, what story it tells, and, most importantly, they know who is going to love it. A simple two-minute conversation about preferences, moods or special occasions lets us recommend something you probably would not have chosen for yourself but that will win you over completely.

Another option is to go for the tasting menu. For groups of two to four people, we offer a guided experience that includes five cocktails from the menu, chosen to show the range of what we offer, paired with a selection of small plates chosen for each one. It is the most complete way to get to know STILLROOM: instead of trying isolated things, you experience a full narrative arc, a story told in liquid chapters that build towards a satisfying ending.

We also recommend giving it time. Our cocktails are not meant to be drunk in a hurry. They are creations that reveal their secrets gradually: the initial aroma says one thing, the first sip another, the development in the mouth a third, and the aftertaste a fourth. Rushing that process is like listening to the opening bars of a symphony and asking to skip to the end. Sit down, enjoy the atmosphere, let each cocktail tell you what it has to say. Time runs differently at STILLROOM, and our menu is designed to make that happen.

STILLROOM’s cocktail menu in Madrid is, ultimately, an invitation to look beyond the obvious. Every creation carries weeks of development, months of refinement, years of accumulated experience. Every name hides a story, every technique answers to an intention, every flavour tries to communicate something that words sometimes cannot. Come, sit down, open the menu. And once you have chosen, relax: the best is yet to come.

Frequently asked questions

What is the starting point for creating a signature cocktail at STILLROOM?

We never start with the ingredients, but with an emotion. We ask ourselves what we want the person tasting it to feel, and from there we look for the structure and techniques that carry that feeling. It is a collective process in our bar laboratory, where we iterate for weeks until the story comes to life. Every variable is meticulously documented so that creativity is elevated by discipline. If you would like to go deeper into this philosophy, we invite you to read our article on the creative process behind our signature cocktails.

What cutting-edge techniques do you use in your cocktail making?

We work with tools that solve specific expressive problems. Fat washing lets us give creamy textures to spirits with no dairy involved; lacto-fermentation transforms acidity into something deep and complex; and homemade cordials, super juices and natural carbonation bring freshness and nuances that are impossible to achieve with industrial products. We are not after showmanship: every method is chosen because it says something that would otherwise stay silent. Ask us at the bar about the technique behind whichever creation catches your eye.

Are your alcohol-free cocktails just simple adaptations?

Not at all. Our alcohol-free creations are built from scratch, with the same technical rigour as the ones made with spirits. We use vegetable lacto-fermentation, wood-infused kombuchas and natural carbonation to build complex structures that do not need alcohol to stand up. They are drinks with an identity of their own, designed for those who want a sophisticated experience without giving up on excellence. Quality is non-negotiable, with or without alcohol, and every sip is designed to surprise.

How do I choose a cocktail if I don’t know your menu?

Our menu is an emotional map, but it is also a living menu that changes over time. The best way to choose is to let our team guide you. In a two-minute conversation about your mood or the occasion, we can recommend a creation you probably would not have chosen for yourself. We also offer a tasting menu for small groups, a guided experience that runs through several chapters of our liquid story, paired with small plates designed for each step.

How long does it take to develop one of your creations?

Development can stretch over weeks, sometimes months. We start with an intuition, an aroma or a technique that sparks our curiosity, and from there we iterate without rushing. We adjust proportions, extraction times, serving temperatures and presentation until the whole thing flows like a natural conversation. Reproducibility does not kill creativity; discipline elevates it. That is why every cocktail we serve carries months of refinement, even though in the glass it feels natural and fleeting.

What full experience can I expect when I visit STILLROOM?

More than a drink, you will find a narrative. Our creations unfold in layers that reveal themselves gradually, so we recommend giving them time. The atmosphere in Los Jerónimos invites calm, and our small plates menu is designed to amplify what is happening in the glass. If you want the full experience, we recommend booking ahead to secure your table and letting yourself be surprised by our liquid stories. Book your experience at STILLROOM and let us tell you something worth listening to.
