In the world of cocktail making there is a subtle but profound border between what is served routinely and what is created with intention. A signature cocktail is not simply a mix of spirits: it is a statement of identity, a liquid story that speaks of the place, the moment and the philosophy of whoever makes it. At Stillroom, on Calle Moreto 9, in the heart of Los Jerónimos, every creation that leaves our bar carries the weight of a constant question: what do we want to tell today?
The signature bartender is not a mixer of ingredients; they are a craftsperson working with textures, temperatures, aromas and memories. Their workshop is the bar, their canvas the glass, and their palette the world of spirits, botanicals and ferments. The difference between a classic cocktail and a signature one lies not only in the originality of the recipe, but in the purpose behind it: while the classic belongs to an established tradition, the signature cocktail belongs to a moment and a creator.
What Is a Signature Cocktail
A signature cocktail is an original creation designed by a bartender or bartending team seeking to express its own identity through the mix. Unlike the classic cocktails recognised by the IBA — such as the Negroni, the Old Fashioned or the Manhattan — which answer to centuries-old recipes and established proportions, the signature cocktail is born from creative freedom within a rigorous technical framework.
Creative freedom does not mean improvisation. It means the bartender can start from any ingredient, technique or concept to build something unique, but always from a mastery of balance: sweet, sour, bitter and alcoholic must speak to one another in harmony. This is why every signature establishment develops its own menu: the creation becomes the vehicle for the bar’s identity.
At Stillroom we conceive every cocktail as a signature piece that could exist only here, only now. That exclusivity is what sets signature cocktail making apart from generic mixology. We invite readers to explore our cocktail and mixology glossary to better understand the terminology surrounding this art.
The Creative Process: From Idea to Glass
Every signature cocktail follows a journey that begins long before the liquid touches the glass. Enzo Ruiz, Stillroom’s Creative Director, leads a methodical process that turns an intuition into a designed experience. This process is divided into five fundamental phases that guarantee coherence between the original idea and the final result.

The first phase is the concept or inspiration. It can be born from an ingredient discovered at a market, a season of the year, a childhood memory or the essence of a place. At Stillroom, the Los Jerónimos neighbourhood and its proximity to the Royal Botanic Garden are inexhaustible sources of inspiration: the aromas of jasmine, lavender and eucalyptus find their way to the bar.
The second phase involves flavour research, known in cocktail making as flavour pairing. The bartender studies which ingredients complement each other, which create an interesting contrast, and how textures can interact. This research includes the selection of base spirits, liqueurs, juices, syrups and elements that will shape the cocktail’s aromatic profile.
The third phase is balance. This is where technique comes into play with greater force. The bartender must calibrate the proportions so that no flavour dominates the others. Sweetness must balance acidity, alcohol must integrate without dominating, and bitterness must add depth without breaking the experience. This phase can require dozens of tests before finding the exact point.
The fourth phase consists of iterative testing. A signature cocktail is not designed in a single attempt. It is tested, adjusted, modified and tested again. Every tweak — a change in the amount of an ingredient, an adjustment to dilution, a variation in serving temperature — alters the experience. At Stillroom, this process can stretch on for weeks until the creation reaches the desired perfection.
The fifth and final phase is presentation. The cocktail is served in a specific glass, with a garnish chosen with intention, at a precise temperature. Glassware, decoration and service are part of the cocktail’s narrative. The same liquid can be perceived completely differently depending on how it is presented. This attention to detail is what turns a drink into an experience.
The Pillars of a Good Signature Cocktail
Five pillars uphold every signature creation that aspires to excellence. The first is balance, the backbone of any cocktail. Without balance, however original the idea, the experience falls flat. The second pillar is impeccable technique. Details such as correct dilution, proper integration of ingredients and handling of ice are fundamental. A badly executed cocktail betrays the creator’s intention.
The third pillar is quality ingredients. At Stillroom we work with selected spirits, fresh fruit, natural botanicals and house-made elements. The quality of the ingredients is inevitably reflected in the final result. The fourth pillar is storytelling: every cocktail tells you something. Whether the story of a place, the memory of a season or a bartender’s vision, there is always a narrative underpinning the creation.
The fifth pillar is sensory surprise. A memorable cocktail must offer something unexpected: an aroma that arrives before the first taste, a texture that defies expectations, an aftertaste that reveals a hidden complexity. These elements combine technique, creativity and artistic sensibility to lift cocktail making beyond a simple mix of drinks.
Techniques We Use at Stillroom
Signature cocktail making is distinguished not only by the ideas, but by the techniques that make those ideas real. At Stillroom we employ a repertoire of advanced methods that turn common ingredients into extraordinary elements. Below, we explore the techniques that define our practice.
Fat washing is a technique that involves infusing alcohol with fats to extract flavours and create unique textures. The alcohol is mixed with a fat — typically bacon, butter or coconut oil — shaken and left to rest. Afterwards, the mixture is frozen to separate the solidified fat from the liquid. The result is an alcohol with a subtle aromatic profile and a slightly oily texture that adds complexity. This technique is especially popular in cocktails seeking savoury or unctuous notes. You can dig deeper into this technique in our article on fat washing in cocktail making.
Lacto-fermentation turns natural sugars into lactic acid through beneficial bacteria. This process brings a complex, slightly creamy acidity that cannot be achieved with conventional juices. At Stillroom we ferment fruit and vegetables to create elements that add depth and originality to our cocktails.
Homemade cordials are syrups made using reduction, infusion or maceration techniques that capture intense flavours from fruit, herbs or spices. Unlike commercial syrups, artisan cordials offer more complex and natural aromatic profiles.
Slow infusions involve letting ingredients rest in alcohol for extended periods — weeks or even months — to extract subtle flavours that cannot be achieved with fast methods. This patience is rewarded with extraordinary aromatic profiles.
Super juice is a technique that maximises the yield of citrus fruit. By grinding the peel together with the juice and adding citric acid, you get a more intense and aromatic citrus concentrate than conventional juice.
Clarification is a filtering process that removes suspended particles and creates a crystal-clear liquid. Beyond the aesthetics, clarification can transform the texture and flavour of a cocktail, removing unwanted flavours and leaving only the desired ones.
To better understand these and other techniques, we recommend exploring our cocktail and mixology glossary.
From Our Bar: 3 Examples of Creation
To illustrate the creative process that defines Stillroom, we want to share the stories behind three creations born at our bar that exemplify our creative philosophy.

The first is Jerónimos 9, an ode to the neighbourhood that is home to us. This cocktail draws inspiration from the Royal Botanic Garden, whose fragrances fill the nearby streets. We create a base of gin infused with eucalyptus and lavender leaves gathered in collaboration with the garden’s gardening team. It is combined with a homemade jasmine cordial, a touch of lemon and an antique rose bitters. The result is a cocktail that evokes a morning walk through the garden: fresh, floral and deeply aromatic. The presentation in a coupe glass with a miniature rose as garnish completes the sensory experience.
The second is Tocino Estelar (Starry Bacon), our interpretation of fat washing. We take a high-quality bourbon and infuse it with artisan bacon for 48 hours. After separating the fat, we get a bourbon with smoky, savoury notes reminiscent of an American breakfast. To balance this intensity, we mix it with pure maple syrup, chocolate bitters and a touch of cacao cream. The garnish consists of a crispy bacon strip that visually reinforces the concept. This cocktail represents our commitment to techniques that turn the ordinary into the extraordinary.
The third is Primavera en Moreto (Spring on Moreto), a seasonal cocktail we celebrate every spring. Its base is vodka infused with wild strawberries and rhubarb, to which we add a fresh mint cordial, lemon and a touch of homemade ginger ale. The pink colour with orange glints evokes the dawn of a spring morning in Madrid. The garnish, a fresh mint leaf and a strawberry slice, adds visual and aromatic freshness. This cocktail captures the fleeting essence of the season: vital, fresh and luminous.
These three examples show how every signature cocktail at Stillroom is born from a clear concept, developed with rigorous technique and presented with narrative intention. You can discover the creations we are serving right now on our cocktail menu.
Why It’s Worth Ordering a Signature Cocktail
Compared with a generic gin and tonic served with mechanical speed, a signature cocktail represents an experience designed, considered and executed with intention. It is not simply about drinking: it is about receiving something that has been thought through for you. Every signature cocktail carries invisible work behind it: hours of research, dozens of tests, a careful selection of ingredients and precise execution.
When you order a signature cocktail, you are choosing to take part in a bartender’s vision. You are accepting a narrative proposal that seeks to make you feel something specific. That is the fundamental difference: a generic drink hydrates you; a signature cocktail speaks to you.
At Stillroom we believe signature cocktail making is worth it because it turns the everyday into the extraordinary, because it dignifies the bartender’s craft as art, and because it offers the guest a one-off experience. It is worth it because every glass holds history, technique and passion.
We invite you to discover it. At Stillroom, every cocktail is a doorway into a world of liquid creativity. Come to Calle Moreto 9, in Los Jerónimos, and let yourself be carried away by creations born from an idea and arriving in the glass with the intention of transforming the way you drink.
Frequently asked questions
What is signature cocktail making?
Signature cocktail making is a movement that conceives each drink as an original piece with its own identity, rather than a standardised mix. The bartender acts as a creator who researches, experiments and designs each cocktail from a prior concept: an aroma, a memory, an ingredient or a place. At Stillroom, this philosophy involves a five-phase process: inspiration, flavour research, balance, iterative testing and careful presentation. The result is exclusive pieces that you would struggle to find anywhere else, because they are born from a specific context and creator.
What is a signature cocktail?
A signature cocktail is an original drink signed by a bartender or by a bar’s team, conceived to express its own identity through the mix. It does not answer to centuries-old recipes or proportions fixed by tradition, but starts from creative freedom within a rigorous technical framework. The balance between sweet, sour, bitter and alcoholic is non-negotiable, but the ingredients, techniques and narrative are unique. In our house, every signature cocktail is a piece that only exists here and now, designed to communicate something specific to whoever tastes it.
How do you create a signature cocktail?
Creating a signature cocktail requires a methodical process that at Stillroom we divide into five phases. First, the concept: an idea that may be born from an ingredient, a season or a memory. Second, flavour research: studying which ingredients complement or contrast with each other. Third, balance: calibrating proportions so that no single flavour dominates. Fourth, iterative testing: adjusting dosage, dilution and temperature until you find the exact point. Fifth, presentation: choosing the glass, garnish and service as part of the narrative. Impeccable technique and quality ingredients are the foundation of the whole journey.
What is the difference between a classic cocktail and a signature cocktail?
The essential difference lies in the origin and purpose. A classic cocktail, such as the Negroni or the Manhattan, belongs to an established tradition and answers to recognised recipes with fixed proportions; its authorship dissolves into collective history. A signature cocktail, on the other hand, belongs to a specific moment and creator: it is born from an original idea, uses its own techniques and combinations, and seeks to convey a specific narrative. While the classic is replicated across thousands of bars, the signature cocktail is an exclusive piece that only exists in the context where it was created.
What makes a cocktail creative?
A creative cocktail is distinguished by intention and sensory surprise. It is not enough to combine unusual ingredients: creativity demands that every element serve a function within the whole. At Stillroom this shows up in techniques such as fat washing, lacto-fermentation or homemade cordials, which transform familiar flavours into new experiences. It also shows up in the storytelling: the cocktail tells you something, whether the memory of a garden or the essence of a season. And above all, in the detail that surprises: an unexpected aroma, a different texture or an aftertaste that invites you to pause.
What are signature drinks?
Signature drinks are original preparations created by a bartender with a recognisable signature, both in flavour and in concept. Unlike generic cocktail making, where the goal is to serve quickly and consistently, a signature drink seeks to express a personal or house vision. Each creation goes through a research and refinement process that can last weeks. The result is not limited to quenching thirst: it offers an experience built from the balance of flavours, temperature, glassware and garnish. You can see it on our signature cocktail menu.
