Stillroom Madrid: This Is the New Gastro Cocktail Bar in Los Jerónimos

Façade of Stillroom Madrid, a gastro cocktail bar in Los Jerónimos

In the heart of Los Jerónimos, five minutes from the Prado Museum, Stillroom Madrid is born. It’s not just another cocktail bar, nor a conventional gastrobar. It’s the materialisation of an idea that’s been years in the making: the Gastro Cocktail Bar, a concept that unites the excellence of signature cocktail making with the precision of fine dining.

We opened our doors in spring 2026 with a clear proposition: to offer an experience where 70% is artisan cocktail making and 30% is gastronomy designed for sharing. No unnecessary complexity, no pretension. Just well-made product, a considered atmosphere and a team that understands that a night out should always be a good experience.

The History: From British Stillrooms to Calle Moreto

The name Stillroom comes from a little-known British tradition. In the great English houses of the 18th and 19th centuries, the stillroom was a separate room where preserves, homemade spirits, medicinal herbs and special beverages were prepared. It wasn’t the main kitchen, but nor was it a simple pantry. It was a space of preparation, of patience, of techniques passed down.

That’s the philosophy we’ve brought to Madrid. A space where in-house preparation, artisan work and attention to detail are at the centre. We don’t serve what anyone can buy: we make our own ingredients, prepare our cocktails using fine-dining techniques and offer small plates designed specifically to accompany what’s in the glass.

The Team: A Shared Vision

Stillroom is the project of Enzo Ruiz and his team: different backgrounds — bar, kitchen and floor — united by a shared way of understanding hospitality.

Enzo Ruiz – Direction and Bar

Enzo brings the strategic vision and operational management, and is the soul of the concept and of the bar: he designs every cocktail from scratch using cutting-edge techniques. His focus is on making the concept work day to day, on keeping quality consistent, on making sure every detail is taken care of. He’s the one who makes sure that what we design in theory holds up in practice, service after service.

Chef John Guerrero – Culinary Direction

With more than 30 years of experience in gastronomy, Chef John brings the culinary vision to the project. His experience in gastronomic consultancy and restaurant management translates into a small plates offering that isn’t an afterthought, but an integral part of the experience. From the smash burger to the Europastri pizza, every item on the menu passes through his judgement.

The Floor Team

Behind every service is a team that knows a great product without great service is worth nothing: making sure every guest feels looked after, that the rhythm of the floor flows, that the experience feels complete.

The Space: Design Without Excess

Stillroom occupies number 9 on Calle de Moreto, in the Los Jerónimos neighbourhood. The space has been designed with function in mind: a central bar where the action happens, tables laid out for conversation, warm lighting that doesn’t force you to raise your voice, music that accompanies without imposing.

The colour palette plays with dark green and golden tones, evoking those British stillrooms but with a contemporary aesthetic. We’re not looking for the space to be the star: we want it to facilitate conversation, chat, and connection.

The Proposition: 70% Cocktails, 30% Gastronomy

Our menu has two souls that coexist:

Signature Cocktails (70% of the Experience)

16 creations that represent our vision of contemporary cocktail making. Fine-dining techniques applied to the glass: clarifications, sous-vide infusions, controlled fermentations. Cocktails that may or may not contain alcohol (NoLo), but which always have complexity, balance and a story to tell.

We don’t make versions of the classics: we make cocktails with their own identity. Each one takes weeks of development, trials and adjustments before it’s ready to leave the bar.

Small Plates to Share (30% of the Experience)

The Stillroom kitchen isn’t a full restaurant: it’s small plates designed for grazing while you drink. A smash burger that falls apart at the touch, a Europastri pizza made with fine-dining technique, plant-based options, cured cheeses. Nothing that needs complicated cutlery, everything designed for sharing.

Conclusion: A Commitment to Doing Things Well

Stillroom isn’t trying to revolutionise anything. We’re not the trendiest bar in Madrid, nor the biggest, nor the one with the most likes on Instagram. What we’re after is simpler: to be a place where the produce lives up to expectations, where the service is attentive, where you can have a conversation without raising your voice, where a night out is a pleasant experience, not an ordeal.

If you’re reading this, it’s because, somehow, you’ve found your way here. Maybe you were looking for somewhere to have a drink after the Prado. Maybe signature cocktail making interests you. Maybe you simply wanted to know what a gastro cocktail bar is. Whatever the reason, there’s a table waiting for you at Calle Moreto, 9. We’re already open. Come and discover it.

Frequently asked questions

What exactly is a Gastro Cocktail Bar?

A Gastro Cocktail Bar is a hybrid between signature cocktail making and gastronomy. At Stillroom, 70% is creative cocktail making using fine-dining techniques (clarifications, sous-vide, fermentations) and 30% is small plates designed to pair with the cocktails. It’s neither a traditional restaurant nor a traditional bar: it’s a complete experience where drinking and eating complement each other.

Where exactly is Stillroom Madrid?

Stillroom is at Calle de Moreto, number 9, in the Los Jerónimos neighbourhood, Madrid. It’s a 5-minute walk from the Prado Museum, 8 minutes from the Reina Sofía and 7 minutes from the Thyssen-Bornemisza, right in the heart of the Art Triangle. It’s accessible from Atocha station (10 minutes on foot) and from the Estación del Arte metro stop (Line 1). We walk you through the route step by step in our walking route from the Prado.

When is Stillroom open, and what are the hours?

We’re open from Wednesday to Sunday: Wednesday and Thursday from 11:00 to 19:00; Friday and Saturday from 11:00 to 15:00 and from 19:00 to 01:30; and Sunday from 11:00 to 23:00. We’re closed on Monday and Tuesday. Brunch is served within those hours: Wednesday and Thursday from 11:00 to 17:00 (from 17:00 to 19:00 we stay open for small plates, something sweet and cocktails), Friday and Saturday from 11:00 to 15:00, and Sunday until 16:00. We recommend booking, especially at the weekend, as capacity is limited to protect the experience.

Can you have dinner at Stillroom, or is it just for drinks?

At Stillroom you can have a grazing-style dinner, but it isn’t a traditional restaurant. We offer small plates to share (smash burger, pizza, cheeses, cured meats) designed to accompany the cocktails. It’s ideal for a relaxed, grazing-style dinner with signature drinks, but we don’t serve a full menu or structured main courses.

How can I book a table at Stillroom?

You can book a table from our book a table page, by phone calling the venue, or directly through our Google Business Profile listing. We take bookings for groups of up to 8 people. For larger groups we organise it as a private event: get in touch and we’ll plan it with you.
